Roasted-Shallot Dressing

​Found this absolutely outstanding roasted-shallot dressing on IG. For some reason, I’ve never roasted shallots, but I knew from the smell in the kitchen that I was going to fall in love, and I did! Very much looking forward to our salad tomorrow night, but I suspect this would be amazing on any veggies, and even meat/seafood.​

Recipe:
1 big or 2 small shallots cut into chunks
2 cloves of garlic, peeled
Zest and juice from 1/2 lemon
1 TB Dijon mustard
2 tsp. Worcestershire sauce
1/4 cider vinegar
1/3 olive oil
Salt and pepper to taste
Fresh parsley, chopped, to finish
Roast the shallots and garlic, tossed in a bit of olive oil, at 375 for 20 minutes. Toss those and the rest of the ingredients (except the parsley) Into a blender/food processor, and puree until smooth. Season with salt and pepper. Add in chopped parsley before serving.
